I recommend choosing a broad niche, such as coffee, for example.
But then you narrow it down by using what are known as topic clusters.
You choose a topic within your broad niche, such as espresso coffee machines. Now your topic cluster is narrowed down to that sub-niche. You can find any number of espresso coffee machine vendors with affiliate programs, including (of course) Amazon, so there is no shortage of products to promote and to create reviews for. Along with ancillary products such as coffee beans and latte glasses.
You can create landing pages and publish blog posts within your topic cluster, giving you all the advantages of a narrow niche, until you've exhausted it.
Then you move on to your next topic cluster.
This is the advantage of having a broad niche in the first place.
And as you build up your topic clusters, you'll find plenty of opportunities to cross-reference them with internal links, as they are all related within your broad niche. And the search engines love internal links, as they add to the solidity and relevance of your site's structure.
